Can you say 'beluga', 'sevruga', 'osetra'? Petrossian can, as it's the largest importer of Russian caviar in the world. The company's farms in France produce plump, silken specimens. Be prepared: it isn't cheap to get all that good stuff over here at Bal Harbour. You can ply your senses with 20 grams of sevruga for $23, or beluga for $47, but you should be aware that, while 20 grams is a feast for a drug addict, it's barely a snort for a true caviar aficionado. And if you're planning on accompanying those sturgeon eggs with champagne, expect some bottles to run over the $400 mark.
